More than 80 firefighters were called out to the centre of Bury St Edmunds at around 10pm on Saturday night to attend a fire at the Strada restaurant.
It is believed the fire was contained to the restaurant at the base of historic Cupola House, but upper levels of the 17th century building have been badly damaged.
Nearby pubs closed early as water supplies were diverted to tackle the fire.
